Short answer. They cool in two different ways. How a gel topper works

Gel-infused memory foam is dense memory foam with cooling gel mixed in or layered on. The gel is more conductive than plain foam, so on first contact it draws heat off your skin faster — that's the cold feeling you get lying down. Soft and breathable pull against each other: the foam that creates a closer hug can reduce airflow, while a build that breathes usually will not cradle as deeply — so one topper should not claim to solve both problems equally well. A breathable topper stays open, which means it doesn't sink as deep or wrap as closely — so it feels firmer and more supportive, and sleeps cooler for longer. You're really choosing between a soft surface that feels cool for a moment and a firmer one that keeps heat moving all night. Softness with a cool touch, or airflow with firmness — not both in one layer.

Which one to pick

If your main complaint is a bed that feels hot and stuffy through the night, the breathable foam is the better match — that's the problem it's built for. If the bed feels fine for temperature and you just want a cooler first-contact feel on a soft surface, a gel topper does that, with the honest caveat that the cool fades.
